Espresso was invented in Italy by Luigi Bezzera 1903, the owner of a manufacturing business. He was not happy because his employees were taking long coffee breaks! If only he could shorten the brewing process used to make coffee, his employees would take shorter coffee breaks. He set out to built the first espresso machine. Luigi Bezzera's machine reduced brewing time from several minutes to just 20 seconds, but it also made a better cup of coffee! A faster brewing time allows for the best qualities of the coffee beans to be extracted, avoiding some of the unfavorable qualities associated with over-extraction.
